If only for the discussion of how to season the cast iron skillet, this is a welcome volume. Based on another publication, I have been wasting time coating a 12 inch cast iron skillet (35 years old) after cleaning it after each use and rubbing oil in it and then putting it in the oven for 2 hours at 325 degrees. Ugh! It works, but. . . . This volume provides a much simpler approach--and one that works.So, simply providing background on how to treat one of these treasures is a real contribution of this volume.But this provides more. Some like Cook's Country, others don't. I like their approach. The book goes on to speak of how to use one of these cast iron skillets. The volume also produces a set of recipes.All in all, a fine work. . . .
Love this book - and the skillet. Have to cut back on the ingredients by about a third because I have a 10" not a 12 " that all of the recipes are in.
After reviewing several cast iron cookbooks from the library, i knew this one was the right one to purchase for a person new to using cast iron. Bought one for each of my children to help them learn about cast iron care and cooking with their heirloom skillets. Very pleased with the beautiful color photos for each and every recipe, as well as the detailed instructions. I believe this cookbook will inspire them to use and enjoy their cast iron skillets for years to come!
I love this cookbook! I've tried the whole roasted chicken on the cover (delicious) I've also made the chicken thighs, salmon with honey lime sauce (yummy) and have all of the ingredients ready for the one pan lasagna dish for tomorrow's dinner. The apple pie looks good as well as tons of other recipes that I will be making . Honestly, there are only two or three recipes in this book that I probably won't make, and a few others that I will likely substitute a main ingredient, like beef or turkey for the lamb. I wish that it were spiral bound, but then I wish that ALL cookbooks were spiral bound :) I am so pleased with my gift.
I made all kinds of skillet meals from this book. The best part I think, is that the book boosts creativity, that is, you can take an idea and then branch off of it with something of your own creation. This book gives the normal every-day "household" chef a broader horizon on meals to cook as well as ways to cook those meals.Everything is beautifully categorized and laid out. The beginning of the book is care and use of your skillet as well as recommendations of types of skillets you can find in stores. There is tested reviews of the skillets so you can find out just exactly how those skillets held up to certain conditions. There is a small "yes", "no" questionnaire in the book that helps you self-determine the best use of your skills with your skillet and how you prefer to do business in the kitchen.Meals are plentiful and can all be made with only the skillet.Great book, definitely would recommend to anyone, beginner or professional.
I have tried soo many recipes in this book and let me tell you, if you are cooking for two, and want just a little leftover, this is it. I cooked the chili, the steak tips and mushrooms, the whole chicken as seen on the cover and the cornbread with slight modifications).. look forward to trying all recipes.
This is the 4th cookbook I have ordered and used. Too often, I have bought cookbooks only to try/use a few recipes. I have used several recipes with great results. Must follow the instruction for their recipes; these are tested and re-worked to give the best results.
This is an amazing cookbook! I've been working my way through it and use it two to three times a week. There are pictures for every recipe and I've honestly liked, if not loved, everything out of here. I've also liked that the recipes use "real" ingredients that I have around, not just expensive or weird ingredients like other cookbooks call for. I've already bought a few of these as gifts for others!
I love this cookbook! I cook in cast iron a lot, and have a nice collection of cast iron pans. This book helped me better understand how to use and maintain these pans and also has great recipes. I have tried 5 recipes so far, and all turned out great. I originally checked this book out from the library but liked it so much I purchased it. Can't wait to try more recipes!
